Cambridge, UK – Putting the butcher knife in the hand of the consumer, a new online video shows people at home how to prepare their own cuts of meat.
Following the popular cooking-show format, The Pig & the Butcher by Vadim Akimenko, meat manager at Massachusetts grocer Savenor’s Market, demonstrates how to separate a pig into different cuts. The video shows how proper butchering avoids waste: after he’s had his way with the 211-pound animal, Akimenko is left with just one pound of meat.
